Swedish Beef Balls 瑞典牛肉丸


Ingredients : 材料  :
2 eggs 雞蛋兩粒打散   
1/4 cup water 清水1/4    
1/4 cup milk 牛奶1/4 






1/2 lemon juice柠檬半个
1/4 cup wine 葡萄酒1/4
2 ounces Butter黄油2盎司
1/2 teaspoon sugar 1/2茶匙





1 teaspoon Parsley香芹葉1茶匙
1 ounce of cheese奶酪1盎司
3 teaspoons olive oil橄欖油3茶匙
1/2 cup bread crumbs麵包糠1/2





3 garlic finely chopped 大蒜3瓣切末
1 Apple finely chopped 蘋果1個搅碎
4 tablespoons sour cream 酸忌廉4湯匙





11/2 pounds ground beef 牛绞肉11/2

Salt and pepper to taste 鹽和胡椒粉適量




3 teaspoons corn starch 玉米淀粉3茶匙
2 Potatoes, cut into strips 
土豆2顆切成條狀
 1 teaspoons ginger finely chopped
1茶匙切末
1 medium onion finely diced 
中等洋蔥1顆切粒



1/2 cup beef broth or beef flavor  
牛肉清湯1/2
4 tablespoons cranberries (Jam) 
 紅莓4湯匙(果醬)
          





1 pounds ground pork
豬絞肉1镑或半肥半瘦的五花肉

Directions : 做法:

1. Prepare ingredients: 2 eggs, ¼ cup milk, 2 potatoes cut into strips, 1 apple finely chopped, 1 medium onion finely chopped, 3 garlic finely chopped.



1. 雞蛋兩粒打散, 牛奶1/4, 土豆2顆切成條狀,中等洋蔥1顆切粒, 1茶匙切末,3瓣切末,蘋果1個使用搅拌机放入蘋果搅碎



2. into the melted butter, Onion, garlic. Stir-fry until fragrant soft, spare.

2. 锅中放入黄油溶化, 洋葱, 蒜粒, 炒至软香, 备用  .




3. In a large mixing bowl, add 1 pounds ground pork, chopped garlic and ginger, two eggs, chopped apple, 1 medium onion finely , 1/2 cup bread crumbs,1 ounce of cheese,3 teaspoons corn starch, 1/4 cup wine, 11/2 pounds ground beef, 1 teaspoon brown sugar, 1/4 cup water, salt and pepper to taste. All the ingredients into a big bowl to makes  the meat ball.



3. 用一個夠大攪拌盆,放入1镑豬絞肉,薑末,蒜末,打入兩粒雞蛋, 蘋果碎,洋蔥1顆切粒, 
麵包糠1/2, 玉米淀粉3茶匙,奶酪1盎司,葡萄酒1/4,牛绞肉11/2,红糖1茶匙, 清水1/4,鹽和胡椒粉適量. 材料通丟進去大盆中製作瑞典牛肉丸
                       
4. Stir the mixture with chopsticks or a spatula in the same direction. While stirring add 1/2 a cup of water. Add the water gradually while stirring not all at the same time Set aside the mixture in the refrigerator for 30 minutes to marinate. 
                                              

4. 開始用筷子顺一方向搅拌或者用攪拌機攪拌成肉餡,在攪拌過程中如感覺水分過少可添加少許水.一面加水一面攪拌直到水份被肉吸收,絞肉有黏性能讓肉更扎實, 拌勻後將肉餡分做成圓球揉成肉丸子狀, 放入冰箱里醃30分鐘備用 .



5.  Once it marinates, create the meatballs to the size of your choice. After, roll them in a thin layer of corn starch.

5. 將牛绞肉搓成大小的牛肉丸, 将每个做好的肉丸沾一層薄薄的玉米淀粉 . 



6. In a pan add olive oil on medium heat.Then place the meatballs one by one in the pan. Cook till meatball has a golden crust then cover the pan and let the meatball is fully cooked.



6. 肉丸子做好之後,起一鍋倒入適量橄欖油,燒到七分左右的熱度,逐個再將肉丸子放入鍋盖上盖子用小火焖煎, 稍微煎一下定型,其間必須一直让丸子不停翻滾,煎至丸子呈金黃色撈出瀝干油


7. In a different pan, add butter and corn starch. Then add the beef broth, ½ cup milk, 4 tablespoon sour cream, 1 teaspoon Parsley. Then add the cooked meatballs in the the sauce and let it steam for
5 minutes                                   

7. 同样的平底锅加入黄油,玉米淀粉, 此時可加入適量的牛肉高湯, 牛奶1/4,酸忌廉4湯匙,香芹葉1茶匙,再把煎過的肉丸子重新下鍋焖5分鐘


8. Cook the sauce : In a pot add 2 tablespoon water ,4 tablespoons cranberries (Jam). Salt and pepper to taste.Finally add cornstarch and cook until thick. 
                      




8.煮调味汁:鍋中锅里加入清水,紅莓4湯匙(果醬). 鹽和胡椒粉適量,繼續攪拌均勻,最後用太白粉勾上薄芡煮至浓稠, 熄火.




9. Potato cut into large pieces. In pan add olive oil, minced garlic and corn starch. Mix together. Bake for 45 minutes until golden brown.




9. 土豆切大条, 放入耐烤的烤盤, 適量橄欖油,  蒜末, 玉米淀粉, 混合在一起, 放入烤箱烤 45分鐘, 微焦黃 , 即可

金黃色的顏色配上翠綠青菜看起來美麗豐盛, 打開鍋蓋那濃濃的肉香味配上土豆的香氣,會帯給您人生幸福的感覚.
