Step 1 :
Soak Cellophane noodles 步驟 1:浸泡粉絲
1 bunch
vermicelli noodle粉絲1束
1. 將粉絲放入清水浸泡軟化後切小段, 並用手擠乾水份撈出待用 .

Step 2 : Prepare boil the meat 步驟 2:豆腐準備
4 Tofu cut halt 豆腐4塊對切半
2 sheets paper towels 紙巾 2 張
2. 豆腐洗淨後切成半, 用紙巾吸乾多餘的水份, 豆腐用小湯匙從中間挖去一小塊, 呈凹穴狀 , 可以深一點但不可挖透.

Step 3 : Prepare boil the meat 步驟 3:調味料
1 egg 雞蛋1個
1/2 teaspoon sugar 糖1/2茶匙
1 teaspoon sauce 醬油1荼匙
1 teaspoon sesame oil 麻油1荼匙
1 teaspoon chicken knorr 雞粉1茶匙
2 teaspoons cooking wine 料酒2茶匙
Salt and pepper to taste 鹽和胡椒粉適量
1 ginger finely chopped 薑末1茶匙薑末
3 cloves garlic finely chopped 大蒜3瓣去皮切碎
1 small chopped red shallot 小紅蔥頭1粒切碎
3. 調味料 : 糖, 醬油,
麻油, 洋蔥, 雞粉,
料酒, 薑末, 大蒜末,
玉米澱粉, 鹽和胡椒粉適量.

pound ground pork 豬絞肉1鎊
1/4 cup of water 清水四分之一杯
1 stem green onion diced 青蔥1根切粒
2 teaspoons corn starch 玉米澱粉2茶匙
Salt and pepper to taste 鹽和胡椒粉適量
1/2 medium onion cut grain 中型洋蔥1/2個切粒
4. 將豬絞肉放入一個大碗內, 把調味料全部放入瘦肉餡中, 順著一個方向充分攪拌均勻, 加入玉米澱粉, 感覺肉餡很乾澀時添加少許清水, 青蔥粒, 再次用同一方法加入清水3次, 繼續攪拌直至感覺到豬肉餡很粘手後放在一邊備用.
Step 5 : Ad the pork into tofu 步驟 5 : 釀豬肉入豆腐
2 teaspoons corn starch 玉米澱粉2茶匙
5. 將剛才攪打好的豬肉餡再分別釀入豆腐裡,
再填豆腐之前先在豆腐穴中拍上一層薄薄的玉米澱粉, 目的是使得豆腐與肉餡能連接得更緊密.
把釀好的豆腐放在碟上.
Step 6 : Fried tofu 步驟 6 : 煎豆腐
1/2 bowl of vegetable oil 植物油 1/2 碗
6. 平底鍋中倒入油燒熱,
有餡的一面朝下放入鍋小火煎熟, 用中火小心地將豆腐四周煎至焦黃,
之後從油中取出豆腐, 放在紙巾上吸乾多餘的油.
Step 7 : Add more ingredients 步驟 7 : 淋醬淋醬
1/2 cup of water清水1/2
杯
2 teaspoon sauce醬油1荼匙
2 tablespoons oyster sauce 淋醬2湯匙
7. 將煎好的豆腐放入碟裡,
取一鍋下橄欖油爆香蒜末, 加入一小碗高湯或清水, 同時加入雞粉, 耗油用水澱粉勾薄芡煮至濃稠即完成淋醬, 淋在豆腐上即可.
