Stir Fry Udon Noodle and Beef  牛肉炒烏冬麵   


Ingredients : 材料 :                                                                              2 teaspoon sesame 芝麻 2茶匙   
1 onion shredded  洋蔥1顆切條   
5 pack fresh udon  烏冬鲜麵 5
2 teaspoon soy sauce  酱油2茶匙 
1 teaspoon sesame oil    麻油1茶匙 
4 teaspoons olive oil  橄欖油4茶匙 
1 carrot shredded 紅蘿蔔1條切細絲
1 pound shredded beef 牛肉1镑切絲
3 finely chopped garlic  蒜頭3瓣切末
1 teaspoon chopped ginger 姜末1茶匙 
2 teaspoons cooking wine  料酒2茶匙  
1 tablespoon oyster sauce  蠔油 1 汤匙 
2 teaspoons chicken powder  雞粉 2茶匙   
1 teaspoons cornstarch  玉米淀粉 1茶匙 
Salt and pepper to taste 鹽和胡椒粉適量  
2 teaspoon black bean sauce  黑豆酱 2茶匙 
3 chopped  red shallot 小紅蔥頭3粒切碎      
1/4 teaspoon baking powder  發酵粉1/4茶匙  
2 stem green onions  shredded 2根切成寸段   
1/2 shredded Chinese cabbage  白菜1/2個切絲或高丽菜
Ingredients : vegetable can add you own and match bell  peppers, celery , chicken led, ham, instead.
按照您喜欢的口味 随意搭配, 高丽菜西芹鳮腿代替.

 

Directions : 做法 :
1. 1 onion shredded, 1 carrot shredded, 3 chopped  red shallot, 3 finely chopped garlic,  2 stem green onion cut into inch,  1/2 shredded Chinese cabbage or cabbage. 2 teaspoons black beans washed . Saute white sesame seeds. 
  
1. 洋蔥1顆切條, 紅蘿蔔1條切細絲, 小紅蔥頭3粒切碎, 蒜頭3瓣切末, 2根切成寸段, 白菜1/2個切絲或高麗菜, 黑豆是2茶匙洗亁淨. 炒香白芝麻. 待用.


  


2. 1 pound shredded beef , clean the beef and pat dry with paper towel to remove excess water. Pound the chicken with a ponder. Prepare the marinade: Combine white wine, salt and pepper and marinate for 15 minutes.



2. 牛肉1鎊切絲, 把牛肉用清水洗亁淨, 用紙巾將多餘的水份擦乾, 和盡可能多拍拍它, 讓肉更容昜入味. 並抹上一點點的料酒, 發酵粉, 鹽, 橄欖油, 再調入少許澱粉和混合拌勻, 醃製15分鐘。

        

3. Boil water in a pot and then add in the udon noodles. Stir with chopstick. Don’t overcook the udon noodles. Remove, strain out the water and set aside. If you’re not sure how to cook the udon noodles the instructions are on the bag.


3. 準備一鍋滾水加少許油, 5 包烏冬鮮面放入滾水鍋中川燙, 用筷子攪拌均勻, 不用久煮稍微過一下沸水即可, 烏冬鮮面煮軟, 保持其Q滑軟彈的口感, 後撈起瀝乾水份放入盤子裡, 等著拌麵條, 您也可以根據包裝說明麵條的烹飪方法.
   

4. Prepare the sauce first, in one small bowl, add in soy sauce, sesame oil, chicken flavor, salt and pepper.


4. 最好事先調好調味汁 : 用一個小碗加入醬油, 蠔油, 麻油, 雞粉, 鹽和胡椒粉適量調味. 
    

5. In a pan, add oil , ginger, garlic and shallots.  Then add in beef and stir fry till half done. Add in the black bean, wine and remove the beef and set aside.


5. 熱鍋倒入冷油放入, 薑末, 紅蔥碎, 大蒜碎爆香, 下醃製過的牛肉絲炒至金黃色8 分熟, 黑豆是翻炒, 料酒炒入味, 取出放入碗中. 備用.
  









6. In the same pan, add in the Chinese cabbage, carrot and onions. Stir fry till cooked.

6. 利用同一鍋剩餘的油, 倒入白菜絲, 紅蘿蔔絲, 最後才放入洋蔥絲, 中火翻炒至材料變軟.  
                                                                          
   

7. Then add in the udon noodles,beef, sauce, green onions and sesame seeds. Then turn the pan on to high heat, stir fry quick. Then this delicious tasty dish is done!


7. 再次倒回先前川燙好的烏冬面條, 牛肉, 調味​​, 青蔥, 最後再加入芝麻, 將鍋子轉成大火, 此時動作要快速翻炒幾下, 直到調味汁均勻的裹在麵條上, 差不多了關火, 把美味的牛肉炒烏冬面盛盤吧.
