Stir Fry Asparagus and Beef 蘆筍炒牛肉
Ingredients : 材料 :
3 slice ginger 薑片3片
1/2 carrot slice 紅蘿蔔半根切
3 teaspoons wine 酒料3茶匙
3 teaspoons
olive oil 橄欖油3茶匙
3 garlic finely chopped 大蒜3瓣切末
1 teaspoon
cornstarch 玉米澱粉1茶匙
1/4 cup of water 清水四分之一杯芡汁
Salt and pepper to taste 鹽和胡椒粉適量
3 pound beef cut into slice 牛肉1鎊切塊
1 onion cut into inch segments 蔥1根切寸段
¼ teaspoon baking powder 發酵粉四分之一茶匙
1 pound asparagus
cut into about 2 inches
蘆筍1鎊切成約2英寸
1 teaspoon oyster sauce
or chicken powder, soy sauce
蠔油1茶匙或者雞粉,醬油
1 teaspoon oyster sauce
or also follow the taste preferences,
soy sauce, chicken, black bean
sauce .
蠔油1茶匙或者雞粉, 醬油, 黑豆瓣醬也可依口味喜好.
Directions : 做法 :
1. Prepare ingredients :

slice ginger, 1/2 carrot slice,3 finely chopped garlic, 1 pound beef, 1 onion cut into inch segments 1 pound
asparagus cut into about 2 inches.
1. 准备材料:薑片3片, 紅蘿蔔半根去皮切片, 大蒜3瓣切末, 牛肉1鎊切塊, 蔥1根切寸段, 蘆筍1鎊切成約2英寸.
2. Clean the
beef and paper towel dry the beef . Then cut into pieces and marinate with
wine, cornstarch and oil. Let it marinate for 15 minutes.
2. 牛肉用清水洗干淨, 擦乾水份切成薄片, 然后切好的牛肉用少許料酒, 醬油,發酵粉, 玉米澱粉少許和油拌勻, 醃製15分鐘.
3. In a pot boil
water and add oil , ½ teaspoon salt, cook
the asparagus in boiling water, Don’t boil the asparagus for too long.
3. 一鍋沸水加入1茶橄欖油, 1/2茶匙鹽, 把蘆筍放入沸水中川燙. 稍微過一下沸水即可.
4. In a big bowl
add in ice water, and blanch the asparagus. This allows the asparagus to be fresh and crunchy. Then remove from
water.
4. 取一个大盤, 加入水和冰塊把川燙好的蘆筍放入冰水裡, 冰鎮以保持蘆筍的脆度和口感 . 撈出瀝幹多餘的水份放入碗中備用 . 蘆筍不用川燙太久煮.
5. In a pan, add
oil, ginger and garlic. Saute together then add marinated asparagus. And remove.
5. 鍋中倒入適量的油, 放入薑片, 蒜末爆香加入醃製過的牛肉塊快速翻炒爆香至8成熟, 後鏟起備用.
6. Add in asparagus in the pan with the chicken. Add
oyster sauce, salt and pepper to taste and add corn start with water to thicken sauce.
6. 再加入川燙好的蘆筍, 醬油,蠔油, 鹽和胡椒粉適量, 水澱粉勾芡炒至濃稠拌勻, 盛出放入盤中即完成了.
