Stir Fry Chinese Broccoli with Chicken Breast 芥蘭炒雞胸肉

Ingredients : 材料 :
4 slice ginger 薑片4
3 teaspoons wine 料酒3茶匙


Ë
1/4 cup of water 清水1/4杯芡汁
3 teaspoons olive oil 橄欖油3茶匙
1 teaspoon cornstarch 玉米澱粉1茶匙

4 garlic finely chopped 大蒜4瓣切末






Ë 
Salt and pepper to taste 鹽和胡椒粉適量

1 stem onion cut into inches 1根切寸段
1 pound broccoli cut two inches 芥蘭1




Ë

1 pound broccoli cut two inches 
芥蘭1鎊切2英寸塊
1 pound chicken breast cut into thick slice雞胸肉1磅切塊

Ë 1 tsp oyster sauce or also follow the taste preferences, soy sauce, chicken,  black bean sauce .
蠔油1茶匙或者雞粉, 醬油, 黑豆瓣醬也可依口味喜好.

Directions :  做法  :   
1.Prepare ingredients: Wash Chinese broccoli, carrots, onions. Slice the carrot, green onion and broccoli into sections.


1. 芥蘭, , 去皮切片, 芥蘭, 蔥洗淨蔥切段. .


  

2. Clean the chicken and paper towel dry the chicken. Then cut into pieces and marinate with wine, cornstarch and oil. Let it marinate for 10 minutes.


2. 鸡肉洗淨擦乾水份切成片, 然后用少許料酒, 水澱粉少許和油拌勻, 醃製10分鐘 . 


   


3. In a pot boil water and add oil , ½ teaspoon salt, and the stem of the broccoli first then add in the leave part. Then remove and drain water. Don’t boil the broccoli for too long.


3. 一鍋沸水加入1茶橄欖油, 1/2茶匙鹽, 把芥蘭和頸分別放入沸水中川燙 . 稍微過下沸水即可.




4. In a big bowl add in ice water, and blanch the broccoli. This allows the broccoli to be fresh and crunchy. Then remove from water.

4. 大碗水加入冰塊把川燙好的芥蘭放入冰水裡, 冰鎮以保持芥蘭的脆度和口感 .撈出瀝幹多餘的水份放入盤中備用 .芥蘭不用川燙太久煮.

  


5. In a pan, add oil, ginger and garlic. Saute together then add marinated chicken. And remove.

5. 鍋中倒入適量的油, 放入薑片, 蒜末爆香加入醃製過的鸡肉塊快速翻炒爆香至8成熟, 後鏟起備用 .


  


6. Add in Chinese broccoli in the pan with the chicken. Add oyster sauce, salt and pepper to taste and add corn start with water to thicken sauce.

  



6. 再加入川燙好的芥蘭, 蠔油, 鹽和胡椒粉適量, 水澱粉勾芡炒至濃稠拌勻, 盛出放入盤中即完成了.
