Step 1 : Prepare cut tofu 步驟 1:準備切豆腐
1 box soft tofu 豆腐 1 盒子
2 sheets paper towels 紙巾 2 張
1. 豆腐洗淨用紙巾吸乾多餘的水份, 將豆腐切成3/4英寸小塊, 在熱水中加入少許鹽,在沸水锅中汆烫.

zanthoxylum 花椒粒1 茶匙
2. 热油鍋,將花椒粒下鍋爆香,留下爆香後的花椒油 備用.

Step 3 : Prepare marinade the meat 步驟
3 : 醃豬絞肉
1 teaspoon
water 清水1茶匙
1 teaspoon soy sauce 醬油1茶匙
1/2 pound ground pork
猪绞肉1/2磅
1 teaspoon chicken knorr 雞粉1茶匙
2 teaspoons corn starch 玉米澱粉2茶匙
2 teaspoon chili
bean paste 辣豆瓣酱1/2 茶匙
3. 將豬絞肉放入一個大碗內, 把調味料醬油,豆豉, 辣豆瓣酱, 雞粉, 玉米澱粉全部放入絞肉餡中, 順著一個方向充分攪拌, 感覺肉餡很乾澀時添加少許清水, 後放在一邊備用

Step 4 : Boil the soup 步驟 4 : 炒豬絞肉

4 cloves garlic finely chopped 大蒜4瓣去皮切碎
4. 用同一样的爆花椒油鍋底,加入蒜末和薑末炒香, 下絞豬肉, 豆豉炒香,一点点的醤油, 辣豆瓣酱, 料酒入味, 糖. 絞肉粆8分熟就盛入碗里.

Step 5 : Cook tofu seasoning 步驟 5 : 煮豆腐調味料
2 cup of water 清水2杯
2 teaspoon sauce 醬油1荼匙
1 teaspoon chili oil 紅油1茶匙
1 teaspoon chili power 辣椒粉1茶匙
2 tablespoons oyster sauce 蚝油2湯匙
1 teaspoon chicken knorr 雞粉1茶匙
1/2 teaspoon sesame oil 麻油1/2荼匙
Salt and pepper to taste 鹽和胡椒粉適量
5.同样的油鍋加入水烧开后,
放入豆腐塊, 蚝油, 糖, 鸡粉.酱油, 辣椒粉, 麻油,
倒入少许香油,鹽和胡椒粉適量调味, 搅拌均匀.

Step 6 Corn starch thicken步驟 6 : 玉米淀粉勾芡
2 teaspoons water 清水2茶匙
1 stem green onion diced 青蔥1根切粒
2 teaspoons corn starch 玉米澱粉2茶匙
7. 豆腐煮好后將豬絞肉回鍋裡, 少许辣椒油, 耗油, 淋入水澱粉勾薄芡煮至濃稠, 撒上葱花即完成美味的麻婆豆腐食譜.
