Step 1 : Prepare to grill the dried

1 dried fish 大地魚乾 l 條
1 bowl soybean sprouts 大豆芽1碗
3 tablespoons dried shrimp 蝦米3湯匙
1 small pieces of ginger slice 薑1小塊
1 bowl shrimp head shell or shrimp
shell 蝦頭殼或蝦殼1碗
2. 煲湯的大地魚乾一定要用火燒烤香或炸過,
把大豆芽, 蝦米, 蝦殼全都洗乾淨,
薑切成片.

Step 2 : Prepare boil the bone 步驟 2:準備汆燙
2 pounds chicken bones 雞骨2鎊
2 pounds pork bone 豬骨2
鎊或瘦肉
3. 如要煮成清爽的餛飩湯底,
增加湯的鮮甜度, 首先把市場買來熬高湯的豬骨, 雞骨分次在開水鍋中汆燙至看不到血色, 之後撈出將全部的食材放在水龍頭下衝洗乾淨血水
,
取出多餘的脂肪放入盤中待用 .

Step 3 : Prepare boiled soup 步驟 3:清水熬湯
1 lo han guo fruit 羅漢果l個
3 teaspoons sauce 醬油3荼匙
l/2 bowl cooking wine 料酒1/2
碗
2 tablespoons fish sauce 魚露2湯匙
3 teaspoons chicken knorr 雞粉3茶匙
3 tablespoons dried shrimp 蝦皮3湯匙
2 teaspoons dried shrimp powder 蝦籽粉2湯匙
Amount of salt and pepper to taste 鹽和白胡椒粉適量
4. 先備備一個煮湯鍋放入川燙過的豬骨,
雞骨, 再大地魚乾, 羅漢果,
醬油, 大豆芽, 蝦米,
薑, 蝦殼, 魚露,
雞粉, 蝦皮, 鹽和白胡椒粉適量.
然後倒入約滿一鍋的清水和上述所有的材料入鍋, 蓋上鍋蓋開大火一起煮滾.

Step 4 : Slow boiled the soup 步驟 4:慢火熬高湯
5.熬餛飩湯底最初要開大火, 待湯滾後再轉小火, 煮高湯底一定要用慢火熬, 不能用猛火讓湯滾起來, 剛好冒小泡就可以熱而不滾.
6. 高湯要繼續熬上 3 個小時左右, 用不銹鋼粉篩撇掉一些多餘的浮末, 廢渣也撈出, 鹽和胡椒粉適量 . 一鍋鲜甜色清澈的馄饨高汤就煮好了.

Step 6 : Wonton soup 步驟 6 : 餛飩高湯
2 tablespoons wonton chilli oil sauce 紅油糖醋汁2 湯匙
7. 按傳統的做法, 將韭黃, 紅油糖醋汁在碗底, 然後加入新鮮的麵條和雲吞.
面條不會浸過腍, 雲吞確保燙熟透, 食用前加入適量蔥花, 紅蔥酥就即完成了.
食後感想:
煮一鍋色清澈的餛飩高湯底, 上等材料一定要齊全不能缺少, 熬高湯最初要開大火, 湯水一煮滾就要轉小火. 最要緊的是湯不能滾起, 不然湯一滾起就會好濁, 高湯就會變成白色, 因為湯裡有魚料, 如果開小火會令到湯色清澈, 這樣煮出來的湯才可以濃而歹濁, 餛飩高湯喝起來味道才會夠清甜. 這是我上網參考學會了熬煮餛飩高湯的方法. 我也很高興和大家一起分享.
