1 tsp Thai roasted chili sauce 泰国烤辣椒酱1茶匙
1. 蒜去皮切碎, 干红葱头去皮切薄片, 檸檬擠成檸檬汁, 香菜切碎, 青葱切粒,
南薑切薄片, 蕃茄切大塊, 香茅拍裂或者切小段, 草菇一罐切厚片, 秀珍菇撕开.
紅辣椒拿走莖部用芽竿剌穿小洞, 会更容易釋放辣味. 檸檬葉撕半, 用手揉搓几下, 让它散发清香出味. 全部材料放入碗, 備用.

Step 2 : Clean the shrimps 步驟 2 : 清洗虾

2 pound large shrimps 急冻大蝦 2 镑
1/2 tsp baking powder 发酵粉 1/2 茶匙
2. 剪掉蝦脚, 去虾头剪去尖刺, 蝦要連殼, 虾头要留起熬汤, 在虾背上深深切一刀,

Step 3 : Boiled shrimps soup 步驟 3 : 煮蝦湯
1 wok 鍋一个
8 cups water 清水8 杯
4 cloves garlic 大蒜 4 瓣
1 piece galangal 南薑1塊
2 tbsp olive oil 橄榄油 2 汤匙
3 shallot slices 干紅蔥頭 3 粒切片
3. 开始煮蝦湯, 烧热鍋, 放入 2 汤匙油, 先爆香南姜, 大蒜及干葱头,
然后放入保留的蝦頭, 虾壳, 把虾頭煎香直到脆, 至颜色变红色, 倒入清水入鍋煮滚, 加蓋慢火熬煮25分鐘. 熬蝦頭汤可以为汤增色, 煮好了就可以倒入漏网去掉多餘的蝦壳,
即成蝦味湯.

5 : Add vegetables 步驟 5 : 添加海鮮蔬菜
1 box of mushrooms 秀珍菇一盒
2 tomatoes cut into chunks 蕃茄 2个切塊

湯底煮好依序放入蔬菜 : 中火煮开然後再加入秀珍菇, 草菇, 蕃茄, 其他材料此时也可一起放入汤底煮滚, 最后放蝦入锅, 用泡熟海鮮的方式直到蝦变红色,

Step 6 : flavor sour soup 步驟 6 :
調味酸辣
1/2 tsp salt 盐1/2 茶匙
1/2 cup fish sauce 魚露 1/2 怀
1 tsp chicken favor 雞粉1茶匙
1 tsp coconut sugar 椰糖一茶匙
2 tsps Thai roasted chili sauce 泰国烤辣椒酱2茶匙
1/2 cup carnation milk or coffee
milk 康乃馨牛奶 1/2 杯或咖啡牛奶
6. 汤底煮开后, 就开始把酸辣汤調味料慢慢加入, 魚露, 泰式辣椒醬,
盐, 煮一阵子汤变色, 慢慢调味道, 如果喜欢湯濃郁一點. 這時可加一点康乃馨牛奶, 搅拌均匀.

Step 7 : Add lemon juice 步驟 7 : 添加檸檬汁
1 tsp vinegar 醋1茶匙
2 lemons juice 檸檬 2 粒
1 bunch of coriander 香菜 1 把
1 stems green onion 青葱 1 根
7. 香菜切碎, 青葱 切粒, 檸檬去核擠成檸檬汁, 可保持湯清新口感,
檸檬最后才加入湯, 煮久了会让汤苦. 口味咸或淡依照个人喜好, 慢慢自行拿捏调味道, 最后熄火, 酸辣汤要起锅前, 撒上葱花, 香菜, 即可完成泰国冬蔭功酸辣汤了.
